of authentic Caribbean dishes, which draw their complex flavors from Trinidadian,
Jamaican, African, Amerindian, British, Spanish, French, Dutch, Indian, and
Chinese cuisines. Chefs assemble meats and seafood into small and large plates
of curries and stews, as traditional Trinidadian Black Fruitcakes rise in the
ovens. In addition to a Caribbean menu of lunch and dinners, the kitchen turns
out French, Italian and American classics such as Soupe de Poisson, Coq au Vin,
Pasta e Fagioli, Galletti marinate in padella with Spinach and Potato Gnocchi (Pan-Fried
Marinated Poussin) and Roast Fillet of Beef with Madeira Sauce, Garlic Mashed
Potato and Asparagus. Finally, feast on
the decadent desserts such as Jalousie aux Amandes et `a l’ Abricot, Crêpe
Suzette, and Roulade au Chocolat et au Marrons or Pumpkin Bread Pudding with Rum Sauce.
